It’s pumpkin season, Malta! October brings along this beloved vegetable which is so versatile and delicious. Pumpkin can be used in both savoury and sweet recipes, and its texture allows it to be used both as a main ingredient with a bit of a bite to it, as well as incorporated into a sauce. 👌

Pumpkin pasta sauce

There are multiple ways you can make pasta sauce with pumpkin. The easiest way would be to puree the pumpkin and cook it in a pan with chopped onions, minced garlic, salt, pepper, cumin, and maybe even some pancetta if you like, while adding a splash of pasta water at the end. ✌️

However, you can also make a pumpkin pasta sauce the carbonara way, by mixing pumpkin puree with beaten eggs and pecorino romano (and maybe even some guanciale). Doesn’t that sound incredible? 🤤



Pumpkin pancakes

Wake up and smell the pumpkin! You can make pumpkin pancakes easily by mixing pumpkin puree with flour, sugar, cinnamon, nutmeg, baking powder, milk, an egg and some vegetable oil. Savoury pumpkin pie

I’m not sure if this is a Maltese thing, but savoury pumpkin pie is one of my favourite pumpkin recipes ever. The filling is a combination of cooked rice, chopped onions, minced garlic, diced pumpkin, canned tuna, olives, salt, pepper and cumin. Just cook everything in a pan and then add it to shortcrust pastry, close it and bake it in the oven until beautifully golden brown. Perfect comfort food! 🥧



Pumpkin soup (obviously)

Speaking about comfort food, you can’t leave pumpkin soup out of a list of pumpkin recipes, can you? My favourite combo is diced pumpkin, chopped garlic, 2 chopped leeks, 2 sweet potatoes, 1 regular potato, salt, pepper and maybe some curry powder, all placed in a large pot with some water and brought to a boil. Once the pumpkin is super tender, just blend it all up and add some cream if you wish. 😋

Pumpkin curry

Pumpkin is a great way to make a vegetarian version of a traditional curry. The sweetness of the pumpkin can also help to balance out the complex flavour of the curry. Pumpkin ravioli

This might be a bit more time-consuming, but pumpkin ravioli sound like the perfect dish for this time of year. The ravioli dough can be made with just flour, eggs and a bit of salt, while the filling can be made with pumpkin pieces, grated parmesan cheese, some brown sugar, a pinch of nutmeg, some salt and pepper, and an egg yolk to bind it all together. I am definitely going to try this one out. I absolutely love hummus and I also love pumpkin, so this combo would definitely be a fav! I had shared my go-to recipe for hummus with you here, but for the pumpkin version, you can also add a bit of cinnamon for that extra autumn-y flavour. 🎃
