Vegan and Gluten Free Lemon Cookies: Sarah Mizzi, Foodie, Sarah Proof 🍋

These cookies are made for all the lemon lovers out there! They’re great as a gift, perfect for a tea party and awesome for a post-Christmas Day feast. These vegan, gluten free and refined sugar free cookies are fresh and zesty and extremely easy to make at home. Recipe makes 7 cookies and Sarah Proof will show us how it's done! 🤤.
Ingredients
- 150g ground almonds
- 30g gluten free oats
- 30g coconut sugar
- 30g maple syrup
- 45g coconut oil, melted
- 20g desiccated coconut
- 1 lemon (zest & juice)
- 1tsp baking powder

The star of the show: the humble lemon.
Method
1. Preheat the oven to 180°C. 🔥
2. Mix all the ingredients into a bowl. (yes, it really is that simple). 🥣
3. Form the dough into cookie shapes and place on a baking sheet. 🍪
4. Bake for 20 minutes or until golden brown. ⏰

The final product - try not to eat them all in one go!
5. Once done, let them cool for around 10 minutes to harden a bit. 🥳

Look at that cookie… crunchy on the outside, absolutely perfect on the inside.
