Top 3 Chicken Recipes for Your Next Sunday Family Lunch 🐔

Sunday lunches with your loved ones often mean going back to basics with some classic food everyone loves and with the Christmas season right around the corner, it’s kind of all you want to do, right? 🤔

Can’t decide what to cook for your next family lunch on a Sunday? Try out one of these timeless chicken recipes that’ll bring even your most talkative relative at a loss for words. 🤣

Lemon Pesto Chicken

Juicy, fresh and flavourful. This recipe is all you’ll want to have on a cosy Sunday afternoon. Start prepping your poultry by letting it marinate in a mixture of olive oil, lemon zest and juice, garlic powder, thyme and salt. Let it sit in the fridge for at least an hour. In the meantime, cut up a few lemon slices thinly and prepare your pesto, homemade or pre-made. Once the chicken is done marinating, put it on a hot grill on medium-high heat. 4-5 minutes on each side maximum - unless you like dried out chicken. 🤷🏻‍♀️

Spread the pesto on your chicken slices, topping with salt, pepper and a few lemon slices before serving. (Bonus Tip: Stay true to your inner Mediterranean chef by serving this with a side of salad with mozzarella, cherry tomatoes and olives). 🇲🇹

Chicken Normandy

If you’ve never eaten this before, get ready to be impressed. Chicken Normandy is an autumny French dish with a heavily fruity, slightly acidic and creamy flavour. What more could you ask for? This one-pot dish consists of chicken breasts dipped in a rich sauce made with apples, apple cider, onions, brandy and cream. When it comes to seasoning, I’d recommend adding some garlic powder, thyme and bay leaf along with some salt and black pepper to taste. Take this dish to the next level by adding in plenty of pine nuts before putting it into the oven. Delicious. 🤯

Creamy Mushroom Garlic Chicken

It’s pretty difficult to not like this one. The subtle yet rich taste of mushrooms and garlic really takes any ordinary meal and turns it into something mouthwatering. Whether you’re in the mood to roast, grill or even fry your chicken, having it with some mushroom and garlic sauce is always a great idea. To make your sauce, you’ll want to start by melting some butter in a skillet and adding your chopped garlic and large mushroom chunks. Stirring occasionally, leave in these ingredients until they’re brown. Drizzle with some red or white wine - they both taste amazing. Add in your cream and bring to a boil. Season with oregano, thyme, parsley, salt and pepper. 🧂

Once your sauce is done, drizzle it over your chicken or pour it into a separate bowl for some good old dipping. 😋

There you have it, 3 simple recipes that give you a bangin’ chicken dinner! Cluck, cluck foodies! 🐓
