Mini baked doughnuts: Mia Ellul Sullivan, Baker, Miamo's Kitchen 🍩

There’s always a reason to bake more treats, why not get a head start with these mini baked doughnuts from Mia Ellul Sullivan, Baker at Miamo's Kitchen recipe book. 



Ingredients

 

  • 320g all purpose flour 
  • 60g butter 
  • 100g granulated sugar 
  • 70g brown sugar 
  • 2 eggs 
  • ¾ teaspoon salt
  • 2 tablespoons of vanilla essence
  • 230g of milk  
  • 1 ½ teaspoon baking powder 
  • 1 teaspoon nutmeg (optional) 
  • 50g oil    
  • 200g milk chocolate, melted 
  • Any toppings of your choice (Kinder Bueno, coconut shavings, Mini Oreos, crushed Oreos, digestive biscuits and many more)

Method

1. Preheat the oven to 180 degrees. Line a doughnut tray with butter or any non stick spray. 

2. In a large bowl add the milk, oil, eggs, room temperature butter and sugar (both the granulated white sugar as well as the brown sugar). Mix until the sugar granules have dissolved. 🧈

3. Next add the flour, baking powder. Mix together

4. Lastly add the vanilla essence, salt and nutmeg. Mix all ingredients together. 

5. Place the mixture in a greased doughnut tray, but only fill half way as they will rise while baking. 👩🏻‍🍳

6. Bake for 10 minutes.

7. Once the doughnuts have cooled off you can start decorating. Simply dip the top part of the doughnut in the melted chocolate, sprinkle with your preferred toppings and place into the fridge to harden. 🍩
