Salmon: it's fresh, it's healthy and it's outright delicious. If you're anything like me, you never give up an opportunity to eat an appetising plate of fresh salmon. Whether it's grilled, mixed with pasta or eaten raw, this type of fish is always worth your time. To celebrate the greatness that is salmon, I've created a list of 5 fantastic ways of cooking salmon that will send you straight into pescatarian heaven. ​​👼



Creamy Coconut Salmon with Rice 

This dish is comforting, warm and fresh. You can do a lot to make it flavourful. The perfect seasonings to go with your coconut sauce include salt, pepper, ginger, lemon or lime, a bit of soy sauce, fresh basil and some finely chopped garlic. For this dish, you can go ahead and cook your salmon (in plenty of olive oil, of course) in a normal skillet along with all the flavourful additions mentioned above. Once the salmon is close to being done, add in your coconut milk and bring to a simmer until creamy. Once this is done, you can lather it on top of a bowl of rice. Simply delicious! 🥥



Penne Pasta with Salmon and Vodka 

If you happen to be both a pasta and vodka lover, this recipe is for you! You can make this dish as creamy as you want because Winter is all about treating yourself to some good comfort food for dinner. In a large pot of salted boiling pasta, cook your penne. The best way to cook pasta is, of course, al dente. In a separate pan, you’ll want to cook some sliced smoked salmon pieces. When stirring, get as rough as you like. The more your salmon is spread out and mixed unevenly, the more salmon you’re likely to get in one bite. Once the salmon is almost ready, throw in some onion, garlic and a shot of vodka. Let the vodka cook off and add your cream to create your sauce. Once your pasta is ready, mix the penne with the sauce and stir. 🍸



Baked Salmon with Orange and Asparagus 

So you want to make a salmon dish that’s both visually appealing, healthy and delicious? Try this out, you won’t be disappointed. In a sheet of foil, place your salmon filet and drizzle with olive oil. Season generously with salt, pepper and soy sauce. Place two or three thin orange slices to make your salmon more zesty. Bake in the oven, and go ahead and heat your salted asparagus on a grill. Garnish with dill, and serve. 🍊



Lemon Garlic Salmon with Sweet Potatoes 

This garlicky recipe is a good one. Marinate your salmon fillet in a mixture of olive oil, finely chopped garlic, lemon juice and dill. After a few hours, take this to the grill and let the heat do its magic. (I like to keep just a little bit of marinate juice and spread it over the salmon in the end - grilling your salmon for a short amount of time won’t dry it up, but we like our fish to be extra moist and succulent). While you’re at it, cut up a sweet potato in thin chunks to give it the shape of fries. Bake in the oven, and serve with the grilled lemon garlic salmon. 🍋



Super Salmon Tacos 

You may not be familiar with this dish but trust me, it’s definitely something worth trying. Start by cutting up some smoked salmon and sauteing in a pan. Add in hot chilli flakes, a squeeze of lemon and salt and pepper. While your salmon is being cooked, go ahead and chop up some avocado, arugula and uncooked onion - you’ll add this to your taco. Drizzle some garlic sauce to complete your base, and when your salmon is ready, place it in your taco. Drizzle with lime juice and chopped up cilantro for a herby, spicy, salmony meal. 🌮
