The Ultimate FoodBlog Malta Bucket List: April 🌞

Can you believe that tomorrow's the fourth month of the year? We have so many things that we still want to do this year, and we want to share those with you! We know there’s no time to waste, so here’s a list of things you can do in April. 📋

Make this salad or this slushie with melons

Melons are now in season! Although I’m not a big fan of this fruit, it does give you a boost of freshness with a kick of sweetness that we all crave from time to time. Melons go really well with salty elements, like parma ham or bacon. Try out this salad recipe, with slices of melons wrapped in prosciutto, or this alcoholic slushie, if mixing fruit with salad isn’t your thing - you only need melons, lime, sugar, salt, mint, and your favourite drink. 🍹



Attend a cooking class

It’s time to brush up on your cooking skills! Cooking classes are a wonderful experience; you learn tips and tricks from people with years of experience. The Mediterranean Culinary Academy provides a number of cooking classes, workshops, and crash courses. You can also check out the local culinary school, Institute of Tourism Studies - they provide a list of short courses and one-session courses. Make homemade sun-dried tomatoes

Sun-dried tomatoes are great with salads, stunning with pasta, and amazing with a fresh Maltese ftira. They’re super easy to make and there are two ways to make them. The most obvious one is letting them dry in the sun (hence the term sun-dried). You just need to slice your tomatoes in half, sprinkle with salt, and let them dry in the sun on an elevated tray or wire rack. There are some other things to look out for, so you can follow this guide here. 🍅



You can also easily make them in the oven by following this recipe. Either way you decide to make them, if you won’t be using them right away, store them in a jar with olive oil, a bay leaf, and some garlic cloves for added flavour. 🧄

Eat out alone

If we’ve learned one thing from 2020, it’s that we need to get comfortable with ourselves, regardless of the situation. And what better way to have some ‘me time’ and pat yourself on the back than by taking you out to lunch or dinner? When eating out alone, you have less distractions and you can actually savour every bite of your food. Check out these places for a solo dining experience. 🍽️



Buy a pestle and mortar

Nothing says fresh and homemade than owning a good pestle and mortar. The first thing that comes to mind when I see this kitchen tool is homemade pesto. All you need is basil, pine nuts, garlic, salt, pepper, and olive oil. Add everything (except the olive oil) to your mortar (the bowl) and grind with the pestle. Once everything is ground up, add the olive oil slowly until you reach your desired consistency. 😋

Make fresh pasta

It’s not as difficult as it sounds and it tastes so much better! You can make fresh pasta by using just 2 ingredients: ‘00’ flour or plain flour and eggs or water. That’s it! Once you combine and knead the dough for a few minutes, you’ll need to cover it in cling film and let it rest for around 30 minutes. ⏳

The rolling out process may be a bit tedious because the dough needs to be almost see-through, but nothing beats a plate of fresh homemade pasta. Cut into your desired shape and boil for just 3 or 4 minutes. 🍝
