Watermelon Wonders: Watermelon recipes to try on Watermelon Day! π
It's a day to celebrate one of the most popular summer fruits in Malta (and possibly in the world) - happy Watermelon Day, folks! π
This fruit is loved on its own all over the world (except by me, sorry π), but it can be incorporated into so many different recipes - both savoury ones and sweet ones! Letβs have a look. π
Salad
This might be the most βbasicβ option, but adding a few cubes of watermelon to your salad will give you a hydration boost as well as a balance of flavours. Gazpacho
Did you know that you could make Watermelon Gazpacho? Gazpacho is a kind of cold vegetable soup or drink with a tomato base that is popular in Spain and Portugal to help beat the summer heat. So can you imagine how refreshing it would be if you add watermelon? All you need to do is blend all the ingredients together and let the mixture chill in the fridge for a few hours. π
Vegan βtunaβ
Thatβs right. If youβre following a vegan or plant-based diet, this oneβs for you. You can make a replacement for tuna using watermelon and a few savoury seasonings to get that βfishyβ taste. Have a look at the recipe below. π
Ice lollies
This is probably the easiest one you can do. Watermelon ice lollies can be made by processing pieces of watermelon, putting them in an ice lolly mould and freezing them for a few hours or overnight. If you want to add other fruits, kiwi, mangos, and even strawberries would make a great combo. π
Salsa
This will definitely elevate your nacho dish. In this recipe, small watermelon cubes are used instead of tomatoes, and mixed together with shallots, coriander, lime juice and olive oil. Whether you put them on top of cheesy nachos or a few pieces of toasted bread is up to you! π
