It’s Soup Season! Check out these amazing soups you can make 🥣

Winter time is here! AKA the season of the soup. I love soup anytime of year, really, but summers in Malta can become too hot to handle eating soup. You can make soup with any veggies you have at hand - just add some stock or broth and some seasoning and you’ll be good to go! 🥣

Some soups have a touch of cream or coconut milk at the end, making them smoother, richer, and creamier. Whatever it is that you like to add to your soup, here are some recipes you can try out:

Pumpkin Soup

This is my favourite. Pumpkin soup is such a soul-warming meal that is the perfect balance! My go-to recipe for 4-6 people is 1 pumpkin, 2 sweet potatoes, 1 regular potato, 2 leeks, 2 cloves of garlic, a teaspoon of cumin powder, and some salt and pepper. Finish it off with around a cup of cream or coconut milk and top it with some fried bacon for a bit of crunch. 🥓



Broccoli Soup

If you’re a fan of these vegetables shaped like tiny trees, you cannot go wrong with making them into a soup. All you need is an onion, some garlic, broccoli, and vegetable broth. You can add anything you wish, like cream, coconut milk, zucchini or peas (for an extra bit of green). 🥦



Lentil Soup

Lentils can be added to any soup, but if you want to make them the star of the show, lentil soup is the way to go. Grab some lentils, carrots, an onion, some garlic, polpa, vegetable broth, and your favourite spices, and get ready to make some warm, soupy goodness. 🥰



Pea Soup

With just a few ingredients required, pea soup can be your best friend this winter. Put a chopped onion, a couple of garlic cloves, peas, leeks and vegetable broth all in a pot, season, cook until everything has softened and the liquid has slightly reduced, and puree. 🍵



Minestrone

When I was younger, I would always ask my mum to puree my portion whenever she cooked minestrone. The flavour blend of a pureed minestrone always tasted better to me. A mix of pumpkin, cauliflower, zucchini, carrots, lentils, bacon, tomato paste, and a teaspoon of curry was always our go-to recipe. 😋



Carrot Soup

Whether you add anything else to your carrot soup or just use carrots with vegetable broth, onion, garlic, carrot soup is one of the best ones. Some delicious varieties of carrot soup include carrot and ginger soup, curried carrot soup, and carrot and pumpkin soup. A great way to boost the carrot flavour in your soup is to roast the carrots in the oven before making the soup. 🥕



French Onion Soup

My appreciation for French onion soup came from Chef Roy Choi’s take on this dish on The Chef Show. Letting the onions cook in their own sugar is crucial here, even though it might take a while. Add beef stock, bay leaves, thyme, a bit of butter, salt and pepper, and some apple brandy or beer, top with cheese, and you’ve got your perfect comfort food. 🧅
