Luscious Lamb Recipes for the Ultimate Winter Roast 🐑

If you’re anything like me, you never miss an opportunity to order lamb when you’re at a restaurant and it’s on the menu. There’s just something about the taste of lamb that makes it unique. The tender texture, the strong, gamey and robust flavour as well as the versatility of the meat are just a few qualities to make it some of the best meats you can eat. 🐑

Garlic & Thyme Roast Lamb

If there’s a perfect time to go all out with seasoning, it’s with cooking lamb. Before putting the meat into the oven, you’ll want to rub oil all over it. You’ll want to bring it to life by seasoning it with a mix of salt, onion powder, cumin, chilli powder and a bit of smoked paprika. Remember, it’s all about the rich thyme and garlic flavours though. In a dish, you’ll want to heat a whole bulb of garlic (cut from the top) and multiple sprigs of thyme. Once the lamb is ready, lather and rub it thoroughly with the rich garlic and thyme. Serve with rosemary roasted wedges. 🧄



Greek Style Lamb 

Lamb chops are great for this dish. You’ll want to season your chops with plenty of olive oil, oregano, salt and garlic powder. Squeeze a lemon and lather them with its juice to bring out that zesty, juicy and overall fresh flavour you’ll surely come to want more of. I personally prefer cooking these on the grill (you can go ahead and cook these on the barbecue but you may end up losing some of the juices). Serve with classic Greek tzatziki on the side, with chips or bread slices. 🍋



Persian-Spiced Lamb Shanks

When it comes to the seasoning, you’ll need plenty of olive oil, turmeric, salt, pepper, cinnamon, saffron threads, cardamom and nutmeg. In a pot, lightly cook an onion and some garlic to create a delicious base in which your lamb shanks will slow cook. Instead of rubbing the shanks with the mixture of seasoning and oil, stir in your seasoning gently as you go along. Since the lamb will be slow cooking, you’ll be preserving all of the flavours and tenderness of the meat this way. Add some water as needed and bring to a simmer. When done, serve with a side salad and some delicious Persian saffron rice. 😋
