Eggs around the world: 8 dishes for any time of day 🍳

Eggs are one of the most simple and versatile ingredients you can get your hands on. They’re also super nutritious and filling, packing protein, fats and HDL (the “good” cholesterol). If you think creatively enough, they can be the star of any meal, which is great if you’re cooking on a budget. 💰

What’s more, every country around the world has dishes dedicated to them. Read on for some of the tastiest egg dishes from around the world that are great for breakfast, lunch, dinner and even dessert 👉

Huevos Rancheros - Mexico 🇲🇽

Huevos Rancheros, translating to ‘rancher’s eggs’, is an ode to the simplicity of breakfast on the farm. Yet there’s nothing simple about the flavours in this dish: fried eggs, pico de gallo, refried beans, tortillas and guacamole. 🥑



This beauty is no longer available BUT, it will always be one to remember! Let’s lift a glass to the Huevos Rancheros at Bianca’s. So long old friend! 👋



Scotch Eggs - United Kingdom 🇬🇧

One of the gems of British cuisine, it’s the perfect bit of street food to pick up when wandering around the marketplace. A boiled egg wrapped in sausage meat, and covered in batter before it’s deep fried to oozy-yolk perfection 🤤



We definitely recommend the spinoff Maltese Sausage Scotch Egg from Barbajean. And if you want to keep things veggie, try out their Falafel Scotch Egg - packed with flavour and totally guilt free! 🌿



Spanish Omelette - Spain 🇪🇸

The tortilla Española is the perfect way to feed your entire family for cheap. Packed with potatoes, onions, and chorizo, it’s surely not your average frittata. 🧅



Make it a bit classier with a trip to Tapea, their Tortilla de Patata is on the money, honey! 🥔



Quiche - France 🇫🇷

It’s impossible to compile this list without thinking of quiche - a pastry crust filled with savoury eggs and customised to suit anyone’s taste buds (not to mention a perfectly delicious way to use up a bunch of eggs that you want to use up). 🥧

Shakshuka - North Africa 🇿🇦

Shakshuka is a dish of North African origin, but it’s now popular all over the Middle east as well; and it’s definitely one of the most underrated ways to eat eggs. To make it, simply simmer a chunky tomato sauce with bell peppers, onions and garlic, then crack as many eggs as you like into the sauce and let them poach till slightly runny. 🍳

Custard Tarts - Portugal 🇵🇹

You’ve heard of quiche, but have you heard of its sweet baby sister, Pastéis de Nata? Portuguese egg tarts are small, flaky pastries filled with an egg yolk custard which is beautifully blistered on the top. 🥰



We’re far from short on good bakers in Malta, and The Good Stuff is one that gets creative in their micro-bakery, with custard tarts making a feature about a year ago… maybe if we ask nicely, they’ll bring them back… please? 💖



Pavlova - Australia/New Zealand 🇦🇺 + 🇳🇿

After you’ve made your custard tarts, you need a way to use up those leftover egg whites - enter the pavlova -  a giant meringue that’s crispy on the outside and soft on the inside. The origin of this dish is quite heavily debated, and most would be surprised to learn it’s not Russian - it’s simply named after a Russian ballerina, Anna Pavlova. 🩰
