Boozy ice pops: 6 tasty freezies to keep you cool this summer ☀️

Ice pops, popsicles, ice lollies, freezies - whatever you call them, they’re just what you want to find in your freezer on a hot summer afternoon. 🧊



How do you like your ice pops?


Reminiscing back to the good old days, we would all go crazy for a freezie (or several); so why not take this childhood favourite and add some adult fun by making it boozy? Making your own drinks at home is always fun and cheaper than heading to the bar, so whipping up these frozen cocktails is the perfect summer DIY activity. We’ll give you the deets on how to make your pops and some fun recipe ideas using fresh in-season fruits and easy-to-find ingredients. Let’s get boozy! 🎉



Ice-pop 101 ✅

There are several ways you can make your alco-popsicles. The easiest is of course to buy an ice-lolly mould like this one, which you can basically get at any kitchen store. For another way to get that popsicle shape you can simply pour your mixture into a cup or appropriately shaped container and place a popsicle stick inside. If you’re looking to achieve a freezie-shape, there are ready-made reusable popsicle bags you can buy and fill up, or you can make your own with a ziplock bag by cutting it into strips with a hot knife (this may be tricky, but if you’re into the whole DIY thing it’s a great method). 🔪

Flavour and Consistency Tips 🤔

You should prep your pops a day ahead as they need at least 8 hours of freezing. For the fruit, it should be ripe so that your flavour is as sweet as possible. You should taste your mixtures before popping them in the freezer so that you can sweeten accordingly - use sugar, simple syrup, honey, maple syrup, or whatever sweetener you prefer. 🍯 

When it comes to the alcohol content in these lollies, for once more isn’t merrier. Alcohol has a very low freezing point, so popping it in the freezer won’t turn it solid. This of course depends on the alcohol percentage - liquors won’t freeze at all whereas something like wine will change it’s texture quite a bit. So make sure your freezer is turned to its coldest setting and don’t add too much alcohol to the pops, and you should turn out with a nice, slushie-like consistency. 🍧

Watermelon Sugar 🍉

Summer in Malta just isn’t the same without watermelon, so of course we had to include this into our list. This pop is light and super easy - all you need is blended fresh watermelon, vodka (watermelon flavoured would work best but regular is fine too) and lemonade. You can also add some fresh mint to the mixture - it goes great with watermelon. 🌿



Strawb Margs 🍓

We chose strawberries for this pop because they’re probably the best local summer fruit, but this margarita-style freezie is super customisable and can be done with any flavour. Simply mix together pureed strawberries, soda or sparkling water, lime juice, tequila and sweetener - voila! 🍾 



Pina Colada 🍍

This cocktail is an all time favourite, so turning it into a frozen version is a must for 40-degree weather. Get the ultimate Caribbean vibes without leaving your house by mixing; fresh pineapple, pineapple juice, sugar, coconut milk and coconut-flavoured or light rum. 🥥



Fruity Moscow Mule 🍸

Turn your alco-pops into something more fancy and adult-ish with this moscow-mule inspired mix. Pour together ginger ale or ginger beer, cranberry vodka, orange juice and lime juice. Adding fruity flavours turns this very winter-feel cocktail into something more bright and summery. 🌴



Raspberry Rosé 🥂

This popsicle is perfect for your girls’ weekend with its pretty pink colour. You can opt for rose wine, champagne or prosecco as the booze, and you can really use any berries you like, but raspberries add a certain flair. This choice is perfectly sweet and simple. 👌



Mango Daiquiri 🥭

Daiquiris are always an amazing drink choice, but frozen daiquiris are indubitably way better. Frozen mango daiquiris on the other hand, absolutely knock the ball out of the park. So with the knowledge that this slushie-like drink is the best thing you can order at any bar, just make it at home! Mangoes + light rum + lime juice + lots of sugar = absolute heaven.🍹
