5 Yummy Soups you'll want to try this Fall 🥣

In autumn, is there anything better than coming home from a long day’s work, putting on comfy clothes and eating something warm? We didn’t think so. As it turns out, grandma was right - soup is one of the best home-cooked meals you can make. It’s really good for your health, it’s easy to make and most of all, it’s just comforting to eat when it’s cold outside. 🥶

To celebrate all the goodness that are soups, here’s a list of my favourite soups you won’t want to miss out on trying this autumn (or winter). 🥣

Tomato Soup with a Twist 

Fan of Italian food? You’ll like this Tomato and Basil soup. To make it, you’ll want to chop up your tomatoes, season them with salt and pepper and pop them in the oven. When they’re all roasted and soft, blend them up to get a nice purée. In the meantime, you’ll want to sauté some garlic and onions in a pot. Drizzle plenty of olive oil before adding in your purée and some vegetable broth. Stir in some pesto from a jar as well as some chopped up basil. Season and serve with bread! 🍅



Too Cheesy Cheddar & Bacon Soup 

If you’re craving some cheesy comfort food on a cold day, this one's for you. Dice up some bacon, garlic and just a few small mushrooms. Cook them up in a pot with butter and a tad of olive oil. Once that’s almost done, add in some flour to get a thick consistency. From now on, you’ll want to begin the stirring process to mix all the flavours well together. While you keep on stirring, gradually add in heavy cream and just a splash of milk. Your soup base is ready. From now on, you’ll want to throw in as much shredded cheese as you like - go as cheesy as you want, there are no rules here. 🧀



No Cream Creamy Soup

Because cutting calories doesn’t have to mean limiting yourself to some mouthwatering, creamy food. This soup is made with zucchini, white broad beans and walnuts. In a pot, you’ll want to sauté garlic and spring onions. Roughly chop up plenty of zucchini and add to the pot. After a few minutes, add your white broad beans (mashing or blending these up will bring out the creaminess). Season with salt, pepper, ginger and dried mint. Blend everything up and add some roughly chopped walnuts before serving. 🤤



Spicy Pumpkin Soup 

There’s no better time for pumpkin soup than in autumn. Roughly cut up plenty of pumpkin and some carrots before placing them in a dish. Add a couple of garlic cloves and some thyme. Place the dish in the oven and once the ingredients are done roasting, take them out. Drizzle the vegetables with olive oil and season with curry powder, salt, turmeric, nutmeg and just a little bit of cinnamon (Told you it’s a spicy soup!). Blend everything up with some vegetable broth and once you get the consistency you want, serve. 🎃



Creamy Mushroom Bisque

You can’t have a soup article without including this. Mushroom bisque is a creamier version of your standard mushroom soup. You can use chestnut mushrooms for this recipe. As always, start by sautéing some garlic in a pot. Add in your mushrooms, as well as plenty of olive oil and a bit of white wine. Season with thyme, parsley, salt and pepper. In the pot, add in chicken or vegetable broth (I prefer the latter) and let simmer before adding your heavy cream. Top with some more parsley upon plating, and serve with a side of garlic bread. 🍄
