4 Microwave Mug Cake Recipes everyone can make in minutes 🎂

There really is nothing more comforting than cake. But what do you do when you’re home alone and know you’ll regret eating an entire gateau from Maypole? Make a mug cake, of course. 💡

Mug cakes are great because they keep the mess to one container, the same one you can eat out of, and take literally no time to cook thanks to our trusted friend Mr Microwave. We’ll be sharing a few of our favourite recipes below for you to try out the next time you have a craving for crumbs.



1. One-Egg Chocolate Brownie ‘Bake’

Mix your dry ingredients (2tbsp sugar, 4tbsp flour and 2tbsp cocoa powder) into your biggest mug. Crack in an egg, mix together, drop in a splash of vinegar (the choice is yours, this can be left out as well) and a splash of milk. Mix as best you can, pop in the microwave on high for 2 minutes. ⚡



Enjoy with a scoop of vanilla ice cream while still hot or leave to cool, turn out of the mug and cover with your favourite buttercream blend. You can also add nuts, raisins or chocolate chips to the cake to heighten the experience, but we do love a classic chocolate ourselves. 

2. Carrot Cake in a Cup

Start with your dry ingredients once again (4tbsp flour, ½ tsp cinnamon, ½ tsp nutmeg), drop in a tablespoon of butter and microwave at 10-second intervals until the butter has melted. Mix together and drop your shredded carrot in. The beauty of this recipe is that you only need one carrot, but hold some back for the topping. 🥕



Pour a half cup of milk over it all and mix with a teaspoon of baking powder. Bang it in the microwave again for another two minutes, but keep an eye on this one. Once it has raised and can hold a firm shape it is ready. 

Scoop over some cold cream cheese and top with the extra carrot, pecans are optional, too. 

3. Lemon and Poppy Seed Mug-Muffin

Grab a smaller mug for this one, as it’s a heavier cake and shouldn’t rise too much. 

Mix together flour (5tbsp), sugar (2tbsp) and baking powder (¼ tsp). From there, we’re going to add our milk and incorporate well. Squeeze over the juice of one lemon (keep what is left once squeezed!), mix well, and add a tablespoon of softened butter. Add as many poppy seeds as you would like, though we do suggest keeping within the lines of 1 teaspoon for the best distribution, and mix in a drop or two of vanilla extract. 🍋



Pop this bad boy in the microwave for 2 minutes, remove and drizzle over some local honey or syrup and squeeze anything else you can out of the leftover lemon. Leave it to cool slightly and allow the syrup and lemon juice time to seep through. Enjoy with a cooling glass of fresh lemonade or side with a scoop of lemon sorbet, zest your lemon remnants again over and enjoy the taste. 

4. A Pot of Pistachio 

This recipe is a bit more bougie, but that’s because we’re using pistachio paste. You should be able to find this ingredient in most high-end supermarkets, but we love using Café Berry’s in-house made nut butter. 😋

Combine roughly 8 tablespoons of pistachio paste with 2 tablespoons of flour, one tablespoon of sugar and a pinch of salt to taste with one large egg (or two small). You want to mix this well enough to have incorporated enough air to lighten the colour of the cake mix. You can always whip the mixture in a separate bowl if needed. 



Microwave for 2 minutes, keeping a close eye and checking every 30 seconds. Just be careful not to interfere too much as the cake may flop. Not that it’ll be much of an issue, though, as this should be topped with more pistachio paste and roughly chopped whole pistachios or whipped cream - so if it does sink, you’ve got more room to fill with your toppings.
